Flank Steak Fajitas

FAMILY-FRIENDLY, GLUTEN-FREE, GREAT FOR LEFTOVERS
Sheet pan recipes and fajitas go hand in hand, as anyone who has smelled the heady aromas coming off a sizzling pan of fajitas can attest. You can use corn or flour tortillas here and add any toppings you want; this is a great family dinner, as it allows everyone to customize their meal any way they wish.
1 teaspoon ground cumin
1 teaspoon paprika
¼ teaspoon cayenne pepper
½ teaspoon kosher salt
1 pound flank steak, cut into thin strips
1 red onion, diced
1 red bell pepper, seeded, ribbed, and diced
2 tablespoons vegetable oil
Corn or flour tortillas, warmed (see cooking tip), for serving
Sour cream, for serving (optional)
Sliced avocado, for serving (optional)
Chopped fresh cilantro, for serving (optional)
1. Preheat the oven to 450°F.
2. In a small bowl, stir together the cumin, paprika, cayenne, and salt.
3. Place the steak, red onion, and red bell pepper on a sheet pan. Drizzle evenly with the vegetable oil. Sprinkle with the spice mix. Using tongs, toss and combine until everything is evenly coated.
4. Bake for 8 to 10 minutes, or until the steak is cooked to your desired doneness.
5. Wrap the steak and vegetables in the warm tortillas and top with your favorite toppings, such as sour cream, avocado, and cilantro.
Cooking tip: Warm the tortillas in the oven for a few minutes before serving, then wrap them in a towel to stay warm throughout the meal. If you like your fajitas spicy, add more cayenne to taste.
